Healthyish Banana Nut Muffins

Ingredients:
  • 2- 3 ripe bananas

  • ½ cup vanilla Greek yoghurt

  • 1 large egg

  • 1 tsp. vanilla extract

  • 1/4 cup honey

  • 2 Tbsp. melted coconut butter

  • 1/4 cup of nut butter

  • 1 tsp cinnamon

  • 1 ½ cup oat flour

  • 1 tsp. baking soda

  • 1/4 cup chopped walnuts

  • 1/4 dark chocolate chips

 
Instructions:

1. Pre-heat oven to 350 degrees F. 

2. In a mixing bowl, mash together the bananas.
3. Add in yoghurt, egg, vanilla extract, honey, and coconut oil. Mix together until everything is combined.
4. In a separate bowl, mix together the cinnamon, flour, baking soda and chopped walnuts. 
5. Pour in the banana mixture and stir until all ingredients are combined. 
6. Line a 12 muffin tin with cupcake liners or grease the muffin tin. Spoon in the batter into the muffin hole. 
7. Bake for 20-25 minutes.

Preparation: 10 mins
Cooking: 20-25 mins
