Maple glazed pumpkin scones

  • ½  cup pecans

  • 2 cups white whole wheat flour or regular whole wheat flour

  • 1 tablespoon baking powder

  • ¼ cup brown sugar, packed

  • 1 teaspoon cinnamon

  • ½ teaspoon salt

  • ⅓ cup solid coconut oil or 5 tablespoons cold butter

  • ¾ cup pumpkin puree

  • ¼ cup oat milk

  • ½ teaspoon vanilla extract

Maple glaze


  • Maple syrup

  • Plain Greek yogurt 


Preheat oven at 425 degrees F.

Mix all dry ingredients together. Combine with wet ingredients. Mix well.

Shape into a circle shape that's about 1 inch deep and place on parchment paper.

Cut into 8 equal pieces. 

Place in the oven for 15 minutes. While baking , mix up Greek yogurt with as much maple syrup as desired.

After 15 minutes, take out scones and let it cool . Top with maple glaze.
