
Mini Blueberry Cheesecake
Ingredients:
Pie crust:

3/4 of a cup of graham cracker crumbles

2 tbsp of butter or coconut oil
Filling:

4 oz of fresh blueberries

5 oz of reduced-fat cream cheese
-
4 oz of plain greek yogurt or blueberry flavor

1 egg white
-
2 tbsp of agave or honey
-
1 tsp vanilla extract
-
1 tbsp of lemon juice
Instructions:
Preheat oven to 350 F

In a large bowl, combine all pie crust ingredients.

Take 1.5 tbsp of mixture and put it into each pie crust.

Bake for 5-6 mins
Blend all ingredients or use a food processor. Blend until you get a nice, thick creamy consistency.
4. Bake for about 12 -15 mins.
5. Take out the pies and let them cool for 30 mins.
6. Stick them in the refrigerator for 2 hours.
7. Top with blueberries ,strawberries, and whipped cream
