Mini Pecan Pie Tarts

Ingredients

PIE CRUST:

  • 2 cups almond flour 

  • 1 cup pecans

  • 3 tbsps of coconut oil, melted

  • 1/4 cup maple syrup

FILLING:

  • 1 cup pitted medjool dates

  • ¼ cup almond milk

  • 1 tsp vanilla extract pecans to top

Instructions

Servings: 12

  1. Preheat oven to 350 degrees

  2. Throw all crust ingredients into a food processor.

  3. Once done, scoop about 1 tbsp. of crust mix into muffin baking pan w/

  4. Press down firmly to really pack it in.

  5. Place in the oven for about 10 mins

  6. While crust is in the oven…

  7. Blend up all ingredients for filling.

  8. Take out pie crusts and let it cool for about 5- 10 mins

  9. Once cooled, spread filling mix into each pie crust.

  10. Top with pecans
