Mini Pecan Pie Tarts

Ingredients
PIE CRUST:

2 cups almond flour
-
1 cup pecans
-
3 tbsps of coconut oil, melted
-
1/4 cup maple syrup
FILLING:
-
1 cup pitted medjool dates
-
¼ cup almond milk
-
1 tsp vanilla extract pecans to top
Instructions
Servings: 12

Preheat oven to 350 degrees
-
Throw all crust ingredients into a food processor.

Once done, scoop about 1 tbsp. of crust mix into muffin baking pan w/
-
Press down firmly to really pack it in.

Place in the oven for about 10 mins
-
While crust is in the oven…
-
Blend up all ingredients for filling.
-
Take out pie crusts and let it cool for about 5- 10 mins
-
Once cooled, spread filling mix into each pie crust.
-
Top with pecans
