Ingredients
1 cup oat flour
1 cup all purpose flour
½ cup of vanilla greek yogurt
1 cup of almond milk
½ cup of blended blueberries
4 tsps of baking powder
2 eggs
Vanilla extract
2 tbsps of monk fruit sugar sub (or choose sugar sub of your choice)
1/4 tsp of salt
Optional toppings:
Peanut butter
Fruit
Maple syrup
Agave
Honey
Preparation
Combine all wet ingredients first...
Then combine with dry ingredients...
Add more almond milk if it's too thick ...
Warm up skillet and spray with cooking spray...i used trader joe’s coconut oil cooking spray
Take 1/4 cup of batter and pour into skillet.
Cook for approx...3 mins on each side
