Spaghetti Squash boat with chicken
1 large spaghetti squash
1 lb shredded rotisserie chicken
1 chopped up red pepper
1 cup shredded cheese of choice
1 tsp pepper
2 tbsp of chipotle ranch dressing
Preheat oven to 400 degrees F.
Prepare a lined baking sheet with parchment paper Spray sheet with cooking oil. Slice the spaghetti squash in half and scoop out seeds.
Spray the spaghetti squash with olive oil and place face down . Bake in the oven for 40 minutes.
After , remove the squash and shred till you get spaghetti like texture . Scoop out and mix with shredded chicken and mix with all other ingredients except green onions. Stuff mixture back into squash skins. Top with cheese. Stick back in oven for 5- 10 mins.
Take out and let cool . Top with green onions and pepper. Hot sauce optional on top.
