Bluebery Greek yogurt pancakes

Ingredients

1 cup oat flour

1 cup all purpose flour

½ cup of vanilla greek yogurt
-
1 cup of almond milk
-
½ cup of blended blueberries
-
4 tsps of baking powder
-
2 eggs
-
Vanilla extract
-
2 tbsps of monk fruit sugar sub (or choose sugar sub of your choice)
-
1/4 tsp of salt
Instructions
✅ Combine all wet ingredients first...then combine with dry ingredients...add more almond milk if it's too thick ...
✅ Warm up skillet and spray with cooking spray...i used trader joe’s coconut oil cooking spray
✅ Take 1/4 cup of batter and pour into skillet. Cook for approx...3 mins on each side
Optional toppings: peanut butter , fruit , maple syrup , agave, honey 🍯
